Vegetarian Bundles

1 10 oz packag frozen chopped spinach -- thawed & drained
1 tablespoon vegetable oil
1/4 cup onion -- finely chopped
1 10 oz packag frozen artichoke hearts* -- thawed & quartered
1 cup small broccoli flowerets -- lightly steamed
2 red bell peppers -- roasted & seeded
1 cup (4 oz.) monterey jack cheese -- shredded
3/4 cup Parmesan cheese -- grated
1 cup fresh cilantro -- minced
1/4 teaspoon ground nutmeg
12 egg roll wrappers, 7" square
muffin tins & Pam spray
* If unable to find frozen artichoke hearts, substitute water packed canned artichokes.
DO NOT use marinated ones.
Preheat oven to 375. Roast red bell peppers in oven until semi-blackened and softened.
Let cook slightly. Lightly steam broccoli flowerets.
Press excess moisture out of the thawed spinach. Heat oil in large skilled over medium heat until hot. cook and stir onions 3 minutes. Add spinach; cook 5 minutes or until spinach is dry.
Add artichoke hearts, broccoli and peppers to skillet; cook and stir 2 to 3 minutes or until heated through. Remove from heat; stir in cheeses, cilantro and nutmeg.
Spray muffin tins with Pam and lay eggroll wrapper on top of muffin area and fill with 1 icecream scoop of the vegetable filling. Close by placing in the palm of your hand and twisting while holding all four ends of the wrapper in fingers of your other hand. Place in muffin tin compartments and spray tops of bundles with Pam. Bake in the oven for 15-20 minutes or until the tops of the wrappers are brown. Cool completely. Wrap bundles in individual squares of aluminum foil. Store in a large ziplock freezer bag.
This recipe may be Frozen.
HANDLING INSTRUCTIONS:
Cool before Freezing.
Defrost Overnight, In the Refrigerator, before heating and eating.
MICROWAVE: Make sure all entrees are in microwave safe containers,
or are placed, in appropriate servings, on microwave-safe plates.
Entrees baked in aluminum containers may be removed in
portions and placed on a microwave safe to be heated
in the microwave.
Heat on medium setting approximately 2 minutes.
OVEN: Open the aluminum foil wrapping, and heat bundles in a 400 degree conventional oven for about 15 minutes to insure the entree will be evenly heated through, and crisp.
