1/3 Cup (+ 2 Teaspoons) Creamy Peanut Butter
1 Tablespoon (+ 1 Teaspoon) Soy Sauce
1 Packet Instant Beef Broth
1 Teaspoon Fresh Ginger Root -- Finely Chopped/Pared
1 Garlic Clove -- Minced
15 Ounces Boneless Beef Loin
(--Or Round Steak, Cut Into Thin Strips)
2 Teaspoons Cornstarch, Dissolved in 1 Tbsp Water
3 Cups Hot- cooked Long-Grain Rice
1. In large plastic bowl, combine peanut butter, soy sauce, broth mix, ginger, garlic and 3/4 cup water; add steak and coat. Refrigerate at least 1-2 hours to marinade.
2. Soak twelve 8-inch bamboo skewers in water. Thread steak evenly on each skewer. trim sharp ends of wooden skewers with sissors.
3. Place in freezer bags and freeze.
4. Arrange skewers in broiler pan; broil 7-8 minutes, brushing frequently with some of the remaining marinade, until cooked throughout and done to taste. ( Or Bar-be-que)
HANDLING INSTRUCTIONS:
This dish may be frozen. If Frozen, defrost OVERNIGHT, IN THE REFRIGERATOR. To complete preparation follow the broiling instructions in item #4 above.
NOTES : Great with rice and oriental vegetables.
