3/4 cup dry soybeans -- Soak 4 hours

1 cup raw bulgur

1 Tbsp Olive Oil

2 cups onion -- minced

3 large cloves garlic -- minced

1/2 tsp salt

1/2 tsp basil

1 pinch black pepper

1 pinch cayenne pepper

1 large bell pepper -- diced

1 l4 1/2 oz tomatoes -- canned, drained

3 Tbsp tomato paste

1/2 cup parsley -- finely minced (pack)

2 cups feta cheese -- crumbled

1 cup boiling water

Preheat oven to 375 degrees. Lightly oil a 9" x 13" baking pan.

Place the bulgur in a small bowl. Add boiling water, cover with a plate and let stand at least 15 minutes.

Heat olive oil in a large skillet. Add onion, garlic, salt & seasonings. Stir occasionally as you sauté over medium heat 5 - 8 minutes. Add bell pepper and sauté approximately 5 minutes more.

Drain soybeans, if necessary, and place them in a blender or food processor with a cup of fresh water. Grind until soybeans resemble a coarse batter. Transfer to a large bowl.

Add soaked bulgur and sautéed vegetables to the soybeans. Stir in the tomatoes, breaking them into bite-sized pieces. Add tomato paste, parsley and 1 cup of feta cheese. Mix well.

Spread into the baking pan and sprinkle with remaining feta cheese on top.

This Recipe may be Frozen either Before OR After Baking.

HANDLING INSTRUCTIONS:

Cool Before Freezing.

Defrost Overnight, In the Refrigerator, before heating and eating.

If Frozen Before Baking:

OVEN: Cover and bake for 30 minutes at 375 Degrees , then Uncover and bake 15 minutes more with the oven turned down to 350 degrees.

If Baked, Cooled and then Frozen:

OVEN: Bake in 375 degree oven 30 minutes to heat evenly throughout.

MICROWAVE: Make sure all entrees are in microwave safe containers, or are placed, in appropriate servings, on microwave-safe plates.

Entrees baked in aluminum containers may be removed in portions, and placed on a microwave safe plate to be heated in the microwave.

Heat in the microwave, on high, for 3-4 minutes. Check heat to insure even distribution.

Serve with Tossed Salad and Hot Rolls.

NOTES: I strongly recommend this recipe. The texture is deeply satisfying, the seasonings are gold, and it is eggless. The soybeans need at least 4 hours to soak before beginning preparation of this recipe. You can assemble the casserole a day or 2 in advance of baking it. Also, it can be frozen before or after baking & reheats beautifully.
